Peter's Icecap confectionery coatings have a creamy mouth feel with no waxiness.
Good for hand dipping, moulding, and enrobing. Not to be confused with real chocolate that contains cocoa butter, these products are made with other vegetable fats for error-free handling without the need for tempering.
Westchester - a milk chocolate flavored coating, frequently used in moulded items as no tempering is needed.

Peters Westchester milk chocolate is the best. Far and away better than Merckens. Peters has a smooth taste, melts smoothly at a lower temperature, and just a better chocolate. The smoothness & taste are very close to Nestle's. When I make my crispies at Christmas, it tastes just like a Nestle Crunch. I used Merckens once several years ago when I could not get Peters. It was a massive mistake. My family members & co-workers asked what problem did I have with the chocolate as it did not taste like prior years. Very few places offer Peters, but Cake Art does & at a reasonable price. Peters Eastchester is a dark chocolate and they also have white caps.
