I was not sure how a non-springform pan would work for cheesecake. I am very pleased with how it works. I have made two cheesecakes so far in an electric pressure cooker. both have turned out to be excellent. This 7" pan fits an electric pressure cooker perfectly. I am happy that it is anodized aluminum and not plain aluminum. Anodizing means that it is a harder surface than plain aluminum. Also, it won't rust like a coated tin pan would or flake off like a non-stick surface can. I expect many years of use out of this pan.
